Ginger Cookies

Preheat oven to 325 F. Lightly grease a baking sheet.

Sift together:
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp cloves
1tsp ginger
¼ tsp salt

Cream together
¾ cup shortening (Crisco)
1 cup granulated sugar

Beat in
1 egg
¼ cup molasses

Beat until light and fluffy.
Stir in dry ingredients. Shape into small Balls and roll each in granulated sugar.
Place on greased baking sheet about 2 inches apart.
Bake in preheated 325 oven for 12 to 15 minutes or until golden brown.
Makes 4 dozen

Buttermilk Oat Pancakes

2 cups rolled oats (not quick)
2 cups buttermilk

2 eggs, beaten to blend
4 tablespoons butter, melted and slightly cooled
1/2 cup all purpose flour
2 tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
vegetable oil for grill

Mix oats and buttermilk in large bowl. Cover and refrigerate overnight; or up to 2 hours.

Whisk eggs and butter into oatmeal mixture. Sift together dry ingredients and add to oat mixture. Heat griddle or heavy large skillet over medium-high. Lightly brush with oil. Ladle batter by 1/4 cupfuls onto griddle (spread out a little...it is thick). Sprinkle some berries over now if you want berries. Cook until batter bubbles and bottom is deep golden brown, about 3-5 minutes per side.

Freeze the leftover cooked pancakes with wax paper between layers. They are great to pop in the toaster frozen for a quick breakfast or snack.

Ingredients:

1 egg
1 cup buttermilk
2 tbsp. oil
1 cup flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Directions:

Beat egg: add remaining ingredients in order listed and beat with rotary beater until smooth. Grease preheated griddle. Test griddle with a few drops of water. If bubbles skitter around it is just right.

Pour batter onto hot griddle. Turn pancakes as as they are puffed and full of bubbles but before bubbles break. Bake other side until golden brown.
